Message Rolling Pin; A shortbread recipe that will win you star baker!

The Great British Bake Off fever has well and truly hit but unfortunately for some of us slightly-less-domesticated types baking can send us into a pitta-despair! But fear not because all you need is the Luckies Message Rolling Pin and this easy-to-follow recipe and before you know it all your friends will be mistaking you for a 50s domestic goddess.

200g plain flour
100g icing sugar
100g cornflour
200g unsalted butter
seeds from 1 vanilla pod
caster sugar

Preheat the oven to 160°C/gas mark 3/325ºF.
Sieve the icing sugar, plain flour and cornflour into a bowl before adding the butter and vanilla seeds. If you have an electrical appliance such as a whisk, food processor or mixer then we strongly suggest using them.
Once the mixture begins to form a ball then turn it out on to a lightly floured worktop and use your message rolling pin to roll the mixture out until it is about 1cm thick.
Now either use a knife to cut your shortbread shapes, or make your life even easier by using our Cookie Cup Cookie Cutter and cut around the messages to create your personal shortbread biscuits. Once cut, use a spatula or palette knife to move the individual biscuits on to a flat baking tray.
Put the tray into the oven and bake for about 20-25 minutes. The shortbread should be pale but with golden edges.
Remove the tray from the oven and let it cool for 10 minutes or so, before moving the biscuits with a palette knife to a wire rack.
Sprinkle with the caster sugar and leave them to cool completely before storing in a tin.
Whilst the shortbread is cooling why not push your domesticatedness (we’ve decided it’s a word okay?!) to the limits and do the dishes using our Spills, Hands and Pans teatowels!
